Ingredients
- 500g plain flour
- 50g caster sugar
- 1 heaped tsp baking powder
- 1/4 tsp fine sea salt
- 110g butter, cubed, at room temperature
- 2 large eggs, beaten
- 200ml milk
For the topping:
- 1 egg, beaten
- 10g caster sugar


Method
Scones might just be the first thing you think of when you think of Avoca. From the humble beginnings of our food markets, our freshly baked scones have always been a firm favourite. Now you can enjoy making them at home!
Makes 4 to 6
Preheat the oven to 180°C. Line a baking tray with non- stick baking paper.
Put the flour, sugar, baking powder and salt in a large bowl and stir to combine, then add the butter and rub it into the dry ingredients until it looks like breadcrumbs.
Add the beaten eggs to the dry ingredients along with the milk, then knead gently to bring together into a soft dough. You may need to add a little more flour if the dough is too wet or a splash of milk if it's too dry.
Turn out the dough onto a lightly floured work surface. Shape into a circle and pat it down until it's 2.5cm thick, then cut into six small or four large scones. Place the scones on the lined tray, then brush with the beaten egg and sprinkle with the sugar.
Bake in the preheated oven for 20 minutes, until golden brown and risen. Allow to cool on a wire rack. Serve warm.
VARIATIONS
Berry & Cinnamon Scones
Add 1/2 teaspoon of ground cinnamon to the dry ingredients, then add 100g of frozen mixed berries with the beaten eggs and milk.
Pear & Almond Scones
Add 100g of diced tinned pears and 1/4 teaspoon of vanilla extract with the beaten eggs and milk. Brush with the eggwash, sprinkle over the extra sugar and scatter some flaked almonds on top.
Chocolate & Orange Scones
Simmer 2 whole Valencia oranges in a large saucepan of boiling water for about 1 hour, until very soft. Drain and allow to cool, then blitz in a blender or food processor until smooth (you need 150g of pulp in total). Add 2 teaspoons of cocoa powder to the dry ingredients. After rubbing in the butter, add just one beaten egg, the orange pulp and 100g of milk chocolate chips, then pour in 100ml of milk. Use the tines of a fork to drizzle over some melted milk chocolate and scatter with a little orange zest after they come out of the oven if you like.
